Casarecce pasta with cherry tomato sauce

This vegan casarecce with raw cherry tomato sauce recipe is super simple and only takes 15 minutes to make. Casarecce is a twisted short pasta that retains a good bite, perfect for simple pasta dishes

Ingreadient:

    • 250g cherry tomatoes, halved
    • 3 spring onions, finely chopped
    • 4 tbsp extra-virgin olive oil
    • 3 tbsp red wine vinegar
    • 4-5 dashes Tabasco
    • 200g casarecce
    • a few leaves basil, torn

Directions :

    1. In a bowl, mix together the cherry tomatoes, spring onions, olive oil, vinegar, Tabasco and season really well with salt and pepper.
    2. Add the casarecce to a large pan of salted boiling water and cook until al dente.
    3. Before draining the pasta, add 1-2 tbsp of the cooking water to the sauce.
    4. Drain the pasta and toss with the sauce.
    5. Sprinkle over the torn basil and serve.
