Casarecce pasta with cherry tomato sauce
This vegan casarecce with raw cherry tomato sauce recipe is super simple and only takes 15 minutes to make. Casarecce is a twisted short pasta that retains a good bite, perfect for simple pasta dishes
Ingreadient:
- 250g cherry tomatoes, halved
- 3 spring onions, finely chopped
- 4 tbsp extra-virgin olive oil
- 3 tbsp red wine vinegar
- 4-5 dashes Tabasco
- 200g casarecce
- a few leaves basil, torn
Directions :
- In a bowl, mix together the cherry tomatoes, spring onions, olive oil, vinegar, Tabasco and season really well with salt and pepper.
- Add the casarecce to a large pan of salted boiling water and cook until al dente.
- Before draining the pasta, add 1-2 tbsp of the cooking water to the sauce.
- Drain the pasta and toss with the sauce.
- Sprinkle over the torn basil and serve.
