Falafel mezze bowl

This quick and easy falafel mezze bowl is packed with flavour and makes a great vegetarian midweek meal for two

Ingreadient:

    • olive oil
    • ½ lemon, juiced
    • 50g young spinach
    • 4 tbsp hummus
    • from a jar 2 roasted red peppers, sliced
    • 1 tbsp pumpkin seeds, toasted
    • to serve warm pittas
    • to serve chilli sauce
    • 200g falafel

Directions :

    1. Heat the falafels in the oven, following packet instructions. Whisk 1 tbsp oil with 2 tbsp of lemon juice and season.
    2. Dress the spinach and divide between 2 large bowls. Add the falafel, hummus and peppers in separate piles.
    3. Scatter over the pumpkin seeds and serve with pittas and chilli sauce.
