Grilled caesar salad
Our quick and easy grilled caesar salad, is a great light evening meal. What'smore, it's vegetarian and gluten-free, plus it comes in at under 500 calories
Ingreadient:
- 2 little gem lettuce, quartered lengthways
- olive oil
- 1 gluten-free bread, slice, cubed and toasted
- 1 tbsp hazelnuts, toasted ad roughly chopped
- 2 tbsp mayonnaise
- 1 tsp Dijon mustard
- 1/2 lemon, juiced
- 20g parmesan or vegetarian alternative, grated, plus 1 tbsp extra to serve
Directions :
- Heat a griddle pan to a medium-high heat. Lightly brush the Little Gem quarters with olive oil and grill for 3-4 minutes on each cut side until charred.
- Whisk the dressing ingredients in a bowl, adding 1 tbsp of water if it’s too thick.
- Drizzle over the lettuce and top with croutons, hazelnuts and grated cheese
